    About this recipe: Packed with protein, these brownies use cooked green lentils and protein powder. They are filling and taste just as good as the real thing. Surprise yourself, and your friends and family, with a healthy alternative!

    Ingredients
    Serves: 10 

    • 1 (400g) tin green lentils, drained and rinsed
    • 3 tablespoons water, or as needed
    • 3 eggs
    • 7 tablespoons caster sugar, or more to taste
    • 3 tablespoons cooking margarine
    • 1 teaspoon vanilla extract
    • 6 tablespoons cocoa powder
    • 5 scoops vanilla protein powder

    Method

    1. Preheat oven to 180 C / Gas 4. Grease bottom and sides of an 20cm square cake tin.
    2. Place lentils and water in a blender; puree into a smooth paste.
    3. Transfer lentil paste to a large bowl. Mix in eggs, sugar, margarine and vanilla extract. Stir in cocoa powder and protein powder until mixture is thick and well-combined. Pour into the prepared cake tin.
    4. Bake in the preheated oven until a skewer inserted into the centre comes out clean, 25 to 30 minutes.
