Healthy crustless quiche

    This recipe is amazing and a great modification to everyday quiche. It is packed FULL of veggies and is very nutritious. You don't even need a crust which makes it way easier to make and much healthier. Enjoy!

    Serves: 4 

    • 1 tablespoon oil
    • 1 onion, chopped
    • 6 asparagus spears, chopped
    • 3 to 4 mushrooms, chopped
    • 2 garlic cloves, minced
    • 1 large handful spinach leaves
    • 6 eggs, beaten
    • 1 good handful grated cheese
    • salt and pepper

    1. Preheat the oven to 180 C / Gas 4.
    2. Heat the oil in a large frying pan over medium heat. Add the onion, asparagus, mushrooms and garlic and stir and cook till softened. Add spinach and cook till wilted and no longer moist.
    3. Combine the eggs, cheese and seasoning. Once blended well, tip in the veggie mixture. Pour into a greased 23cm pie dish.
    4. Bake for 30 minutes, making sure the centre is cooked through. Check by inserting a knife in the centre; if it comes out clean, the quiche is ready.
    5. Serve immediately or serve later cold or at room temperature.

    I think that this recipe is nice, but I would not call it a quiche. It is an omelet which is baked in the oven.  -  23 Sep 2017


    Only had one problem with this and that was it was meant for lunch boxes for the work week, however, it tasted so good we ate it as a snack through out the day of making it - it is great hot and cold and really filled the gap of missing out on quiches due to cutting out pastry. I didn't use asparagus and added bacon  -  08 Apr 2017
