This recipe is amazing and a great modification to everyday quiche. It is packed FULL of veggies and is very nutritious. You don't even need a crust which makes it way easier to make and much healthier. Enjoy!
Only had one problem with this and that was it was meant for lunch boxes for the work week, however, it tasted so good we ate it as a snack through out the day of making it - it is great hot and cold and really filled the gap of missing out on quiches due to cutting out pastry.
