About this recipe: A simple, easy and fast way to have fun with the family or on your own. Cupcakes with minimal ingredients and fuss, but maximum deliciousness!

Makes: 12 cupcakes with butter icing

  • 175g (6 oz) self raising flour
  • 175g (6 oz) caster sugar
  • 175g (6 oz) margarine or butter, softened
  • 2 eggs
  • Icing
  • 50 to 75g margarine or butter, softened
  • 110g (4 oz) icing sugar

  1. Preheat the oven to 200 C / 180 C fan / Gas 6. Put 12 cupcake cases into a cupcake tin.
  2. Sift the flour into a large mixing bowl. Add sugar and stir. Add margarine or butter and eggs. Mix with an electric whisk for 2 minutes, till thick and creamy. Spoon equally into 12 cupcake cases.
  3. Bake cupcakes in the preheated oven for 12 to 18 minutes if using a fan oven (cupcakes may require an additional few minutes if using a regular or gas oven). Remove and cool on a wire rack.
  4. Whilst the cakes are cooling, start to make the icing. Beat the butter or margarine till soft and creamy. Sift in half the icing sugar; beat well. Add remaining icing sugar a bit at a time, stirring in between each addition, till desired consistency is reached.
  5. Spread the butter icing over the cakes once they are completely cool. Enjoy your cakes with a nice cup of tea.


Add some decorations to make the cupcakes look prettier. You could also add any of the following flavourings to the cupcake mixture: 1 teaspoon vanilla extract; 1 teaspoon almond extract; 2 tablespoons lemon or orange zest; 100g mini chocolate chips.
