Clam chowder based on tins, making this super easy. Coconut milk is the surprise ingredient in this chowder. If you don't like coconut milk, just use about 700ml of regular milk for the recipe.

Ingredients
Serves: 6
200g bacon, fat removed
2 large onions
700g potatoes, peeled
600ml water
salt and pepper to season
2 tins of baby clams in brine (280g)
400ml milk
400ml coconut milk

Cut bacon into postage stamp sized squares. Finely dice potatoes and onion.
Fry onions and bacon, until the onions begin to soften, then add water, potatoes, salt and pepper and simmer until the potatoes soften.
Add the clams and liquid in the tins, milk and coconut milk and boil briefly, then serve.
