About this recipe: This is my favourite biscuit to make with kids. The recipe is very easy and calls for just 5 simple ingredients.


Makes: 36 cookies

  • 170g butter, softened
  • 100g caster sugar
  • 2 egg yolks
  • 220g plain flour
  • 160g jam, any flavour

  1. Preheat the oven to 180 C / Gas 4.
  2. In a medium bowl, cream together the butter, caster sugar and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 5cm balls. If dough is too soft, chill for 15 to 20 minutes. Place balls 8cm apart on ungreased baking trays. Use your thumb or an instrument of similar size to make a thumbprint or well in the centre of each cookie. Fill the hole with 1/2 teaspoon of jam.
  3. Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Transfer from baking tray to cooling racks.
