Algerian tomato and green pepper salad

    This tomato and roasted green pepper salad is known as Felfel Bel Tomatich. It is typically served cold as a starter. I sometimes add a hot pepper to bring out the taste. If you decide to do the same, it's best served with bread.

    Serves: 4 

    • 3 or 4 tablespoons olive oil
    • 3 ripe tomatoes, peeled and diced
    • 5 cloves garlic, crushed
    • 6 or 7 green peppers, roasted, seeded and diced
    • salt to taste

    1. Heat olive oil in a frying pan over medium heat; add tomatoes and garlic and cook for 10 to 15 minutes, stirring occasionally.
    2. Add the roast peppers and cook for 5 minutes. Season to taste with salt; chill and serve cold.


    If roasted peppers are not readily available, they can be prepared by placing whole peppers in the oven preheated at 220 C / Gas 7. Let them roast for about 45 minutes. They will then be very tender and easy to peel.
