Vegan apple and banana muffins

    Easy to make, these vegan muffins use banana instead of egg and are chock-a-block with apple chunks.

    Makes: 12 vegan muffins

    • 100g caster sugar
    • 30g banana
    • 255g plain flour
    • 3 teaspoons baking powder
    • 1/2 teaspoon ground cinnamon (optional)
    • 1/4 teaspoon salt
    • 225ml almond milk
    • 110g apple

    1. Preheat the oven to 200 C / Gas 6. Line a muffin tin with 12 paper cases.
    2. Cream the banana with the sugar till smooth. In a separate bowl, combine the flour, baking powder, cinnamon and salt.
    3. Add half of the flour mixture and half of the almond milk to the banana mixture and stir well. Add the remaining gradually till fully combined. Stir in the apple, then spoon into prepared cases.
    4. Bake in the preheated oven for 20 to 25 minutes, or till a skewer inserted in the centre comes out clean.

    yes this is my own recipe but for a first try it was darned good, even though it took a few of my carbs from my macros  -  10 Apr 2016
