Easy Algerian roasted red pepper salad

    I love the famous Algerian salad with roasted peppers and tomatoes called 'felfel b’tomatich', but I don't always have time to blacken my peppers in the oven or on the barbecue. So here's the 'cheat' version that uses ready-made roasted peppers from a jar.

    Serves: 4 

    • 1 jar roasted peppers in olive oil (about 300g)
    • 2 cloves garlic, crushed
    • ½ teaspoon paprika
    • ½ teaspoon ground cumin
    • 3 ripe tomatoes
    • 1/4 teaspoon harissa (optional)
    • salt and freshly ground pepper

    1. Take 3 tablespoons of oil from the jar of peppers and heat in a frying pan. Add the crushed garlic, paprika and cumin and cook 2 or 3 minutes to release the flavours.
    2. Place the tomatoes in a saucepan of boiling water off the heat; allow them to soak until their skin splits. Peel and chop the tomatoes and add them to the pan. Cook for about 20 minutes over low heat, until there is no more juice in the pan.
    3. Chop the peppers into small pieces; add them to the pan and stir well. Simmer for 5 minutes to allow the flavours to blend. Season with harissa, salt and pepper. Allow the salad to cool before serving.
