Vegemite® spaghetti

    Great for the kids, super quick to make and zero skill required. All my fellow Vegemite® and Marmite® fanatics out there, this one's for us.

    Serves: 2 

    • 150-200g spaghetti
    • olive oil
    • 100g button mushrooms, sliced
    • 1 clove garlic, minced
    • 2 tablespoons unsalted butter
    • 1 to 2 teaspoons Vegemite®
    • 1 handful fresh parsley, torn (optional)
    • Parmesan cheese, finely grated, to serve (optional)
    • cracked black pepper to taste

    1. Pop your spaghetti in some salted boiling water and cook according to packet instructions.
    2. Meanwhile, heat a little olive oil over medium heat in a suitably sized pan and begin sauteing your mushrooms and garlic. When soft and slightly browned, add in your butter and stir until melted. Add in 1 teaspoon of Vegemite® (unless you know you'll love it a little stronger), 2 tablespoons of your spaghetti water, and stir until the Vegemite® blends.
    3. Drain your spaghetti and add in to your pan, then reduce heat to low. Toss your spaghetti until everything is mixed and your Vegemite® sauce is soaked up. Taste for preference and if you do fancy a little more Vegemite®, then add in an extra teaspoon, but make sure it's stirred in and blended throughout.
    4. If you're adding it, throw in your parsley last minute and toss a few more times. Serve with plenty of Parmesan and a little black pepper. Enjoy!


    If you wish to keep this dish vegetarian, omit the Parmesan, or use a vegetarian Parmesan alternative or sharp Cheddar.
