This unusual combination of ingredients makes a colourful sandwich that is packed with interesting textures and good flavours. It only takes a few minutes to make, so is perfect for a quick lunch or a snack at any time.

1 carrot, about 125 g (4½ oz), grated
30 g (1 oz) watercress, roughly chopped
2 tbsp chopped fresh chives
150 g (5½ oz) reduced-fat soft cheese
8 thick slices rye bread
2 cans sardines in olive oil, about 120 g each, drained
1 small red onion, thinly sliced pepper
a few long fresh chives to garnish

Mix the grated carrot, watercress and chives into the soft cheese. Season to taste with pepper.
Spread the cheese mixture evenly over one side of each slice of rye bread. Halve the sardines lengthways, then arrange them, skin side up, on top of the cheese.
Arrange the red onion slices over the sardines and top with a few long pieces of chive to garnish. Sprinkle with pepper and serve.
