Rice with peas and carrots

    This dish is cooked once a week in the North African families. It is usually served with grilled meat or chicken, or with fish.

    Serves: 6 

    • 125g basmati rice
    • 1 onion, minced or coarsely chopped
    • 2 tablespoons olive oil
    • ½ teaspoon saffron
    • 1 tablespoon salt
    • 1 teaspoon black pepper
    • 350g frozen peas and diced carrots

    1. Rinse the rice and soak in a bowl of cold water.
    2. Place the onion with oil, saffron, salt and pepper in a deep frying pan or a wide pot.
    3. Fry over low heat until the onion turns golden, about 10 minutes.
    4. Add the peas and carrots, and simmer over low heat for 15 minutes.
    5. Add the rice with 250ml water. Cook over medium heat until the rice has absorbed all the sauce, 15 to 20 minutes.
