About this recipe: These homemade bite-size broccoli and cheese nuggets are a nice alternative to chicken nuggets!


Serves: 4 

  • 1 teaspoon vegetable oil, or as needed
  • 450g chopped broccoli
  • 120g breadcrumbs
  • 175g grated Cheddar cheese
  • 3 eggs
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder

  1. Preheat oven to 180 C / Gas 4. Grease a baking tray with vegetable oil.
  2. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to the boil; add broccoli, cover, and steam until tender, 2 to 6 minutes. Let broccoli cool at room temperature until cool enough to touch.
  3. Transfer broccoli into a large mixing bowl. Add breadcrumbs, grated cheese, eggs, basil, oregano and garlic powder to the broccoli; mix. Shape into nuggets or fun shapes and arrange onto the prepared baking tray.
  4. Bake in preheated for 15 minutes, flip and continue baking until heated through and beginning to firm up, 10 to 15 minutes more.
