About this recipe: A nice warming, easy to make creamy chicken casserole with lots of healthy veggies. The amount of veggies you add are up to you!

Serves: 4 

  • 3 - 4 large chicken breast fillets, cubed
  • small potatoes sliced
  • 2 medium onions, chopped
  • 1 large red pepper, chopped
  • button mushrooms, sliced
  • carrots, sliced
  • 250ml white wine
  • 1 (400g) tin condensed chicken soup
  • 1 teaspoon wholegrain mustard
  • 1 teaspoon paprika
  • 1 dessertspoon Italian herbs
  • 3 cloves garlic, thinly sliced
  • 1 tub of garlic and herb soft cheese
  • peas
  • salt and pepper to taste

  1. Mix all the ingredients together, except the soft cheese and the peas ( you will add these two ingredients towards the end).
  2. Cover and cook for 6 to 7 hours on Low. Stir in the soft cheese during the last 60 minutes of cooking time. Add the peas in the last 20 minutes of cooking time. Season to taste with salt and pepper.
