Moroccan mint tea

    • 4 teaspoons green tea
    • 2 bunches fresh mint, rinsed and drained
    • 9 cubes sugar

    1. Pour a glass of freshly boiled water over the green tea, wait a minute then strain the tea leaves and discard the water. This process rinses the tea and helps remove some of its bitterness.
    2. Place the rinsed tea leaves in a teapot. Add the mint leaves, 8 small glasses of simmering water and 9 sugar cubes.
    3. Let the tea steep for 7 minutes. Do not use a spoon to stir the tea, simply pour the tea into a glass, put it back into the teapot and repeat the process several times.
    4. To serve, pour the tea into glasses, holding the teapot high above the glasses, to allow bubbles to form at the surface, the sign of a well made tea.
