Easy coleslaw

    Preparing this coleslaw is easy. The only tricky part is waiting! It just tastes much better if you give it time to chill and let the flavours blend. Adding onion comes down to a personal preference, or you could use red onion or spring onions if you prefer.

    Serves: 12 

    • 110g mayonnaise
    • 60g sugar, or to taste
    • 4 tablespoons milk
    • 2 1/2 tablespoons lemon juice
    • 1 1/2 tablespoons vinegar
    • salt and pepper to taste
    • 650g shredded cabbage
    • 60g grated carrots
    • 40g minced sweet onion

    Prep:15min  ›  Extra time:3hr chilling  ›  Ready in:3hr15min 

    1. Whisk together mayonnaise, sugar, milk, lemon juice, vinegar, salt and pepper in a large bowl.
    2. Toss the shredded cabbage, carrots and onion into the dressing; mix well. Refrigerate for at least 3 hours or up to overnight before serving.

    This is awesome! I made with light Miracle Whip. Skipped the onion. I almost added more liquid as it seemed very light on dressing when I made it. Glad that I didn't, however, as it moistened up after sitting in the refrigerator for awhile. I also added some celery seed as we like that in our coleslaw. Will definately make this again.     I like my slaw more on the vinegar side then the sweet side so I reduced the sugar to 1/4 cup, doubled the vinegar and instead of milk, I used buttermilk. If you can, make this the day before you need it...it's worth the wait.  -  06 Jul 2009  (Review from Allrecipes US | Canada)
