    This is a noodle dish for all those at university or college and on a budget. Season to taste with mixed herbs and spices, olives and sun dried tomatoes.

    Serves: 2 

    • vegetable oil for frying
    • 2 to 3 chicken breasts, cut into chunks
    • 10 olives, chopped into quarters
    • 3 sun-dried tomatoes, cut into quarters
    • 2 garlic cloves, crushed
    • 4 packets of instant noodles with seasoning sachets
    • 4 pinches of mixed herbs, or to taste
    • 1/2 tablespoon of paprika, or to taste
    • 1 mug of peas

    1. Heat oil in a frying pan over medium heat; fry the chicken pieces until no longer pink and cooked through, about 10 to 12 minutes.
    2. Stir in chopped olives, sun-dried tomatoes and garlic. Add the noodles and seasoning sachets; pour in just enough boiling water to cover the noodles. Cook for 3 to 4 minutes.
    3. Season with mixed herbs and paprika. Add peas; simmer until cooked through and the sauce has thickened.
