Gluten free white bread

    Makes: 1 gluten free loaf

    • 210ml warm water
    • 2 teaspoons dried active baking yeast
    • 3 tablespoons sunflower oil (or any vegetable oil)
    • 1 tablespoon apple cider vinegar
    • 1 egg
    • 1 egg white
    • 280g gluten free plain flour
    • 2 teaspoons xanthan gum

    1. Dissolve yeast in warm water. Let it stand until creamy, around 10 minutes. Add oil, vinegar, egg and egg white.
    2. Place gluten free flour mix with xanthan gum in a stand mixer bowl. With the paddle attachment, mix on low speed, gradually adding wet ingredients. Once completely added, increase speed to medium and mix till smooth.
    3. Grease a 900g loaf tin (about 21x11cm), or use a non-stick tin. Pour mixture in tin, and smooth the top with a spatula. Cover with a towel and let rise for 1 hour in a warm area (rising time will vary depending on altitude, temperature and humidity).
    4. Preheat oven to 190 C / Gas 5.
    5. Bake bread in preheated oven in the middle rack for 45 minutes. Once baked, remove loaf from tin, cover with a towel and let cool before slicing.

    Best recipe I've tried , almost given up finding a recipe that isn't dry and crumbly. Actually rose , soft bread. The mixture was left to rise in very warm place , in top oven which was off while bottom oven on cooking something else helped it rise a lot. Added whole golden linseed's to the mixture a tablespoon, also a teaspoon of honey and teaspoon of salt.  -  11 Dec 2017
