Place the bread in a food processor and process into crumbs.
Combine the breadcrumbs with all remaining ingredients. Mix well (mixing by hand is best in my eyes, my kids love doing this for me).
After everything has come together, separate the mix into balls (into whatever size burgers you want; remember the meat will shrink while cooking). Flatten each ball into burgers. Remember to make all the burgers the same size and thickness for equal cooking times. (Again my kids love doing this stage.)
Cut some squares of greaseproof paper and put the flattened burger onto it,then you can put the next one on top of it and so on (4 max on top of each other). Put in fridge for 30 minutes, or as long as possible so the burger sets in the fridge, which will make sure it doesn't fall apart during cooking. (These can also be frozen like this now with the greaseproof paper in between each burger.)
Cook the burgers in a 180 C / Gas 4 oven for 20 minutes, then finish under the grill for 3 minutes per side to get more colour on them.
Serve burgers on buns with your favourite toppings.
