This easy recipe for an authentic Italian gelato is great for special occasions. Add any additions you like or simply serve with a fruit puree.

250ml fresh whole milk
500ml fresh double cream
1 vanilla pod, halved lenghtwise
150g caster sugar
1 pinch salt
Method Prep:5min › Cook:25min › Extra time:30min › Ready in:1hr
Place milk and cream in a saucepan; bring to a simmer over medium heat. Add the vanilla pod and remove the sauce from the heat. Cover the saucepan but keep the vanilla pod in the sauce so it can infuse for 30 minutes.
Remove the vanilla, add sugar and a pinch of salt; stir well. Chill in the fridge for at least 1 hour. It should be cold when you pour it into the ice cream machine.
Transfer the chilled sauce into ice cream machine and follow the instruction to make a gelato.
Serve right away or store in the freezer for a few hours in a lidded container.
