About this recipe: Fresh tomatoes, green pepper and onion tossed with a simple vinaigrette and fresh parsley taste wonderful after marinating for a few hours.


Serves: 4 

  • Salad
  • 4 ripe beef tomatoes, quartered, or more to taste
  • 1 onion, sliced into thin rings
  • 1 green pepper, sliced into thin rings
  • Dressing
  • 120ml olive oil
  • 120ml cider vinegar
  • 1 tablespoon freshly chopped garlic
  • 2 teaspoons freshly chopped parsley
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon freshly ground black pepper

  1. Place tomatoes in a shallow serving dish. Arrange onion rings on top. Arrange green pepper rings on top of onions.
  2. Combine olive oil, cider vinegar, garlic, parsley, salt, sugar and black pepper in a jar. Close jar tightly and shake vigorously until dressing is well-mixed. Pour dressing over tomatoes, onions and peppers. Refrigerate until flavours combine, about 2 hours.
