Preheat the oven to 180 C / Gas 4.
Brush the cut sides of the butternut squash with olive oil. Place the butternut squash cut side down on a baking tray.
Bake in the preheated oven and cook for about 45 minutes, or until the squash is soft.
Scrape out the butternut squash, leaving the skin behind. Transfer to a blender or food processor. Puree till smooth.
Serve once cool, or to freeze for later: fill an ice cube tray with the squash puree. Freeze for at least 2 hours, till solid. Remove cubes from tray and place in a freezer bag. To defrost, place in microwave for 30 seconds, or as needed.
For a thinner puree, add breast milk, formula or water to reach your desired consistency.
