Parsnip, carrot and sweet potato baby food

For older babies who have been enjoying solids for a few months already, this little dish is a treat. Parsnips, carrots and sweet potato combine with a little stock for a nutritional powerhouse.

    1 person made this

    Makes: 500 g, approximately

    • 4 carrots, peeled and sliced
    • 2 parsnips, peeled and diced
    • 1 sweet potato, peeled and diced
    • 250ml salt-free chicken or vegetable stock

    Prep:10min  ›  Cook:25min  ›  Ready in:35min

    1. Combine the carrots, parsnips, sweet potato and stock in a saucepan. Bring to the boil, then reduce heat to a simmer and cook, covered, till the veg is tender, about 20 minutes.
    2. Remove from heat. Mash with a potato masher, or transfer to a blender and puree till smooth. Add additional stock, or water, to create a thinner consistency, if liked.

    Freezing tip

To freeze for later: fill an ice cube tray with the puree. Freeze for at least 2 hours, till solid. Remove cubes from tray and place in a freezer bag. To defrost, place in microwave for 30 seconds, or as needed.

    Introducing new flavours

For older babies, 7 months and up, you can start to introduce some seasoning. The key is to start with just a bit and see what your baby likes. You could add a pinch of ground nutmeg or ginger to this recipe, for example. Avoid salt till your baby is 1 year old.
