Greek pitta bread pizzas

    Pitta bread is topped with a spinach, olives, tomatoes, feta, mozzarella and a lemon dressing in this Greek-inspired vegetarian pizza.

    • 2 tablespoons lemon juice
    • 1/2 teaspoon garlic powder
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon dried basil
    • 6 tablespoons olive oil
    • 2 round pitta breads
    • 100g fresh spinach leaves
    • 40g halved cherry tomatoes
    • 3 tablespoons chopped pimento-stuffed green olives
    • 50g grated mozzarella cheese
    • 75g feta cheese

    1. Preheat oven to 180 C / Gas 4.
    2. Mix lemon juice, garlic powder, oregano and basil in a bowl; whisk oil into lemon juice mixture until dressing is well blended. Brush about 1 tablespoon dressing over pitta breads and arrange on a baking tray; reserve remaining dressing.
    3. Combine spinach, tomatoes and olives in a large bowl. Pour remaining dressing over vegetables and toss to coat. Divide spinach mixture evenly over each pitta; sprinkle with mozzarella cheese and feta cheese.
    4. Bake in the preheated oven until cheese is melted and pittas are lightly toasted, about 8 minutes.

    This was very good! The dressing is tart and fresh and went very well with all the ingredients. I used jalapeno stuffed green olives and I added a roasted red pepper.     PERFECTO! I made this exactly as written and it was a perfect balance. I was worried that my missus wouldn't like the olives or lemon juice, but they were just the right amount for her that she actually commented about it. And I have more of a sour/salty taste than my missus, but it was just enough for me too! We did have fresh from the garden tomatoes, so that helped and I had to use two pita halves to make wholes. It's all my store had. We WILL make this again and I might try to incorporate some capers with it, just to try.     The flavours were great. The only change I made was to substitute an Italian cheese blend for he mozzarella to add more flavour. There was, however, way too much oil in this recipe, in my opinion. In the future, I would cut the oil by half at least, perhaps even more.
