Chocolate pastry

    This recipe is based on the typical Italian-style sweet pastry that uses egg yolks. However, in this version, I have added cocoa to make a delicious chocolate pastry.

    Makes: 1 pastry base for 25cm tart

    • 90g butter, frozen
    • 220g plain flour
    • 40g cocoa powder
    • 80g icing sugar
    • 1 pinch salt
    • 1 teaspoon baking powder
    • 1 teaspoon vanilla extract
    • 2 egg yolks

    1. Place flour, cocoa, icing sugar, salt and baking powder in a large bowl; mix well.
    2. Beat the egg yolks with the vanilla extract in a small bowl; add to the dry mixture and mix with a silicon spatula.
    3. Remove the butter from the freezer and coarsely grate it into the bowl. Use your fingertips to quickly combine into a ball of dough, adding a tablespoon of iced water if it's too dry.
    4. Wrap in cling film and refrigerate for 1 hour before using.
