Minions cupcakes

    Is it Minions-mania at your home too? To make my kids happy I came up with this idea of funny lemony mini-cupcakes iced with white chocolate in the shape of the little Minions buddies. Use regular cupcakes if you prefer, you'll have more room to decorate.

    Ingredients
    Makes: 24 mini cupcakes

    • For the decoration
    • 40g white chocolate
    • blue food colouring gel
    • 40 sugar eyes
    • black edible gel decorating pen

    Method

    1. Make 24 vanilla mini cupcakes as in the suggested recipe or following your favourite recipe. Add to the mixture lemon zest, lemon extract and a few drops of yellow food colouring. This way, the cupcakes will get a lemony flavour and a distinctive yellow colour, resembling Minions.
    2. Bake the cupcakes for 12 to 15 minutes or until a skewer comes out clean. Cool completely on a rack.
    3. Place the white chocolate in a heatproof bowl and melt in the microwave. Alternatively, melt in a double boiler. Add the blue food colouring to the melted chocolate, a few drops at the time. Stir well and often to make sure the chocolate stays smooth and spreadable.
    4. With a spatula spread the blue chocolate on the top of each cupcake, covering about 1/3 of the surface. If the chocolate hardens while icing the cupcakes, microwave for 15 to 20 seconds or place on the hot double boiler. Ice all the mini cupcakes, then set aside till icing is set.
    5. Stick 1 or 2 sugar eyes on the un-iced part of each cupcake. To secure them, use a small drop of melted chocolate. With the gel pen, draw circles around the eyes to make glasses. Draw a mouth and some hair if you have space.
    6. Refrigerate for 1 hour or until time to serve.

    Note

    I preferred to use mini-cupcakes because it was a little kids party, but you can replace them with regular full-sized cupcakes if you like. It will be easier to decorate, you will have more room to draw glasses, mouth and hair.
