Gluten free and dairy free sponge cake

    Very simple, yet delicious, this gluten free vanilla sponge cake has only 4 ingredients and one type of flour, white rice flour.

    Makes: 1 sponge cake

    • 5 eggs, at room temperature
    • 150g caster sugar
    • 150g white rice flour, sifted
    • 1 tablespoon vanilla extract

    1. Preheat oven to 180 C / Gas 4. Grease a 23cm springform cake tin and dust with flour.
    2. Using a stand mixer, whisk eggs and sugar at medium speed for at least 10 to 15 minutes, until mix is foamy and light yellow.
    3. Using a wooden spoon, add sifted rice flour gradually and carefully until fully combined. Add vanilla extract. Pour mixture into cake tin.
    4. Bake in preheated oven for 35 to 40 minutes, until golden. (Tip: Do not open oven door during baking.)
    5. Remove from oven, let stand for a few minutes before inverting cake on a wire rack and letting it cool.
    6. Serve with icing sugar and fresh fruit, or either on its own.
