About this recipe:Before overnights oats, there was bircher muesli. This more modern version uses soy milk and has blueberries and pecans. You can use whatever milk, berries and nuts you enjoy best. Make this the night before to have in the morning - a very fast, easy breakfast.
500ml vanilla soy milk, divided
150g frozen blueberries
80g porridge oats
2 tablespoons coconut flakes
60g pecans, chopped
250g vanilla yoghurt

Blend 250ml soy milk with blueberries in a blender until the mixture has the consistency of a smoothie, about 1 minute.
Stir together the oats, coconut and pecans in a large bowl. Stir in the blueberry mixture, yogurt and the remaining soy milk. Cover; chill for at least 4 hours or overnight.
