Berry bircher muesli

    Before overnights oats, there was bircher muesli. This more modern version uses soy milk and has blueberries and pecans. You can use whatever milk, berries and nuts you enjoy best. Make this the night before to have in the morning - a very fast, easy breakfast.

    Ingredients
    Serves: 4 

    • 500ml vanilla soy milk, divided
    • 150g frozen blueberries
    • 80g porridge oats
    • 2 tablespoons coconut flakes
    • 60g pecans, chopped
    • 250g vanilla yoghurt

    Method
    Prep:10min  ›  Extra time:4hr chilling  ›  Ready in:4hr10min 

    1. Blend 250ml soy milk with blueberries in a blender until the mixture has the consistency of a smoothie, about 1 minute.
    2. Stir together the oats, coconut and pecans in a large bowl. Stir in the blueberry mixture, yogurt and the remaining soy milk. Cover; chill for at least 4 hours or overnight.

    This is my introduction to muesli, and we enjoyed it. I like that you easily can mix it up the night before, and it's ready for you in the morning. All of this recipe's ingredients are things that I eat often (just not all together), so I felt pretty certain I'd like this...and I did!  -  24 Oct 2014  (Review from Allrecipes US | Canada)
