Caprese pasta salad with mozzarella

    A quick, easy to make 'Caprese Pasta Salad' is light and fresh salad great for spring and summer potluck, a lunch, a side dish, or even a snack. It's really easy to make recipe and you just need few main quality ingredients including fresh mozzarella, tomatoes, pasta, extra virgin olive oil, etc.

    • 360g good quality pasta
    • 2 balls mozzarella cheese, chopped
    • 12 small cherry tomatoes, or 2 to 4 larger ones, chopped
    • fresh basil leaves
    • extra virgin olive oil
    • good quality balsamic vinegar
    • salt and pepper

    1. Cook the pasta in a large pan of boiling, salted water for a couple of minutes less than it says on the packet – it should be ‘al dente’.
    2. In the meantime chop the mozzarella and tomatoes into smallish pieces and place in a large salad bowl with some fresh basil leaves.
    3. Drain the pasta and rinse quickly with cold water to cool it down. Drain off the cold water really well – the pasta must not be wet when added to the other ingredients.
    4. Add the pasta to the mozzarella and tomatoes and mix gently. Drizzle the pasta salad with olive oil and balsamic vinegar to taste, add salt and pepper.
