About this recipe: Enjoy crispy, crunchy granola clusters without any added sugar or sugar substitutes. You can vary the nuts and seeds to take advantage of what you have in the cupboard.

Serves: 6 

  • 300g rolled oats
  • 60g chopped almonds
  • 40g sesame seeds
  • 20g unsweetened desiccated coconut
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 3 large egg whites
  • 1 teaspoon vanilla extract (optional)

  1. Preheat oven to 110 C / Gas 1/4. Line a baking tray with parchment.
  2. In a large bowl mix together the oats, almonds, coconut, sesame seeds, cinnamon and salt.
  3. In a separate bowl beat the egg whites until stiff peaks form. Beat in the optional vanilla. Stir the egg whites into the oat and nut mixture. Spread the mixture onto the prepared baking tray.
  4. Bake in preheated oven for 60 minutes, stirring every 20 minutes.
