About this recipe: This seafood stir fry is a quick low carb meal on the table in 5 minutes! Substitute prawns for the scallops if you prefer, or use a combination.

Serves: 2 

  • 3 teaspoons coconut oil
  • 100g mangetout
  • 100g sliced mushrooms
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 2 to 3 spring onions, chopped
  • 400g scallops
  • 1 tablespoon honey
  • 1 to 2 teaspoons chilli sauce (to taste)

Prep:10min  ›  Cook:5min  ›  Ready in:15min 

  1. Heat the oil in a large frying pan or wok until hot. Add the sliced veg and stir fry on a high heat for 1 to 2 minutes.
  2. Add the scallops, honey and chilli sauce. Stir fry for another 2 minutes. Serve immediately with a green salad or beansprouts.


Use a mild olive oil if you don't have coconut oil.
