About this recipe:
Gluten free and low carb easy kebabs, made from both beef and lamb and flavoured with paprika, garlic, mustard and spring onion.
225g minced lamb
225g minced beef
2 spring onions, finely chopped
2 cloves garlic, crushed
1/2 teaspoon paprika
1/4 teaspoon ground black pepper
1 teaspoon prepared mustard
1 small egg, beaten
1 green pepper, cut into 3cm pieces
1 small courgette, sliced
1 handful mushrooms or cherry tomatoes
- Mix the mince, onion, garlic, spices and mustard. When mixed well, add the egg to bind.
- Take about 1 heaped tablespoon of the mixture and roll into a ball. Continue with the rest of the mince mixture.
- Thread onto skewers with the sliced vegetables.
- Grill under high heat (or on the BBQ) for 4 to 5 minutes each side until browned.
You can use all beef or all lamb mince, but I think the combination works nicely! Substitute any veg on the kebabs you like. Or add in cubes of halloumi cheese.
