1 teaspoon chopped fresh tarragon, or 1/2 teaspoon dried
4 slices Parma ham
1 tablespoon butter or coconut oil
6 peppercorns, crushed (optional)
60ml cream

Season the turkey with pepper, lemon juice and half the tarragon. Wrap each turkey steak in 2 slices of the ham.
Heat the butter or coconut oil in a pan, and fry the steaks for 3 to 5 minutes on each side, until cooked through and no longer pink in the centre.
Add the remainder of the tarragon, crushed peppercorns and cream to the pan, and stir until heated through. If you prefer the sauce reduced, allow to boil for a minute to evaporate some of the liquid.
