3 small Williams pears, peeled and chopped
1 lemon, juiced
2 tablespoons sugar
130g dark chocolate, finely chopped
2 eggs, room temperature
100g granulated sugar
100g plain flour
1 teaspoon baking powder

Place the pear in a bowl with lemon juice and 2 tablespoons of sugar. Toss and let sit while preparing the cake.
Preheat the oven to 180 C / Gas 4. Line a 21cm round cake tin with parchment.
Melt 100g of the chocolate with the butter in a double boiler or in the microwave.
Beat the eggs with 100g sugar until pale and fluffy. Sift in the flour mixed with the baking powder and stir gently, with a bottom-up movement. Add melted chocolate and mix till smooth.
Pour the mixture in the prepared tin and spread evenly. Add the pears, pressing a few into the centre of the cake and leaving the others on the top. Sprinkle the top with the remaining chocolate, finely chopped.
Bake in the preheated oven for 30 minutes or until a skewer comes out clean. Remove from oven and cool on a rack before slicing.
