Skinny lemon muffins

    These healthy lemon muffins are delightful. Moist and sweet with a zingy lemon kick. Nutritious enough for breakfast and amazing with with a cup of your favourite warm drink.

    Makes: 6 muffins

    • 150g oat flour
    • 45g sugar alternative
    • 1/2 tablespoon bicarbonate of soda
    • 1 pinch salt (I use pink salt)
    • 125ml almond milk
    • 60ml coconut oil
    • 1 egg
    • 1/2 teaspoon vanilla
    • juice of 1 large lemon
    • zest of 2 large lemons
    • For the icing
    • 100g Greek yoghurt
    • 1 tablespoon coconut sugar
    • juice of 1/2 a lemon

    1. Pre-heat your oven to 170 C / Gas 3. Line a muffin tin with paper cases.
    2. Mix together the dry ingredients in one bowl and the wet in another. Spoon mixture into prepared cases.
    3. Bake for 20 minutes, or till a skewer inserted in the centre comes out clean.
    4. For the icing simply whisk all ingredients together and after the muffins have cooled, spread on top. Sprinkle some leftover zest for decoration and enjoy!
