Dad's creamy cucumber salad

About this recipe: This is my dad's recipe and one of our family's summer favourites. It's basically slices of cucumber and sweet onion in a dressing made with mayonnaise and vinegar.

Serves: 8

  • 2 large cucumbers, peeled and thinly sliced
  • 1 sweet onion, thinly sliced
  • 1 tablespoon sea salt, or to taste
  • 350ml mayonnaise, or more to taste
  • 2 tablespoons vinegar
  • 1 tablespoon sugar
  • 1 teaspoon dried dill
  • 1 teaspoon garlic powder
  • 1 teaspoon freshly ground black pepper

Prep:1hr15min  ›  Extra time:2hr chilling  ›  Ready in:3hr15min

  1. Mix cucumber and sweet onion with sea salt in a bowl. Cover bowl with cling film and let sit for 30 minutes.
  2. Transfer cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes. Transfer drained cucumber mixture to a large bowl.
  3. Stir mayonnaise, vinegar, sugar, dill, garlic powder and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  4. Cover bowl with cling film and refrigerate for at least 2 hours.
