Tasty chicken soup

    Chicken soup made using leftover chicken from a chicken carcass. Thrifty and waste-conscious, not to mention delicious!

    Serves: 4 

    • 1 chicken carcass
    • 1 large potato, peeled and diced
    • 1 large onion, diced
    • 2 carrots, diced
    • 1 tin chickpeas, drained
    • 1 teaspoon curry powder
    • salt and pepper

    1. Place the chicken carcass in a saucepan and cover with water. Bring to the boil, then reduce to a simmer. Cover and simmer for 1 to 2 hours. Remove from heat.
    2. Strip bones of all chicken meat. Reserve the meat and discard the bones and any skin.
    3. Place stock in a fresh pan and add all remaining ingredients. Bring to the boil, then reduce heat and simmer until veg are all soft.
    4. Blend using a hand blender or liquidiser to your desired consistency.
    5. Check for seasoning, and add more water or chicken stock if soup is too thick. Serve with crusty bread.


    You can include the chicken skin, but this will add calories and make it a fattier soup.
