About this recipe: The easiest curry fish dish ever. Can be used with other fish but you might have to adjust the cooking time.

Serves: 2 

  • 4 tablespoons dry sherry (or rice wine)
  • 1 tablespoon curry powder or paste, such as Madras
  • 1 tablespoon dark soy sauce
  • 1 teaspoon soft brown sugar
  • 1 teaspoon salt
  • 250g skinless salmon, cut into 2.5cm cubes
  • 200g king prawns
  • oil for frying

Prep:5min  ›  Cook:4min  ›  Extra time:1hr marinating  ›  Ready in:1hr9min 

  1. Put all the ingredients except the salmon and prawns into a mixing bowl and mix well. Add the salmon and prawns and mix well again, allow to marinate for 1 hour.
  2. Heat a drizzle of oil in a frying pan or wok over medium high heat. Add the salmon and prawns and stir fry for about 4 minutes, till opaque. Serve with white rice.
