    About this recipe: Make a richly flavoured, gluten-free, chocolate tapioca dessert by mixing milk and tapioca pearls with chopped dark chocolate.

    Serves: 6 

    • 700ml milk
    • 3 tablespoons tapioca pearls
    • 1 egg, beaten
    • 100g caster sugar
    • 85g dark chocolate, chopped
    • 3 tablespoons unsweetened cocoa powder (optional)
    • 1 teaspoon vanilla extract

    1. Mix the milk, tapioca, egg and sugar together in a saucepan until the sugar has dissolved; allow to stand for 5 minutes.
    2. Whisk in the chopped chocolate and cocoa powder.
    3. Place over medium heat; bring to the boil, whisking constantly and let boil for 2 minutes.
    4. Remove from heat and whisk in the vanilla extract. Allow to cool for 20 minutes. Serve warm or chilled.
