I purchased a large traditional haggis one day as it was on offer, it was sitting in my freezer for a while until I decided I would try and make some burgers with it. I put this recipe together and thought it worked well (that's if you like haggis!).
Don't completely fill the pan when cooking, I've found that haggis burgers are slightly weaker than your average beef burger so leave some space to get a spatula under in order to flip the burger. Once you've got the spatula under the burger I've found it is best to flip it relatively quickly without putting pressure on its edge in the process.
