    About this recipe: Fresh sweetcorn and courgette are pan-fried in butter, creating a lovely side dish perfect for late summer evenings.

    Serves: 4 

    • 4 tablespoons butter
    • 1/2 small onion, finely diced
    • 3 small courgettes, diced
    • 3 ears of fresh sweetcorn, husks removed
    • sea salt to taste
    • freshly ground black pepper to taste

    1. Heat butter in a pan over medium heat, stirring occasionally, until lightly browned, 1 to 2 minutes. Cook and stir onion in the melted butter until softened, about 5 minutes. Cut kernels from the ears of corn. Add courgette and sweetcorn; cook and stir until courgette is tender, about 8 minutes. Season with sea salt and pepper.
