Easy Yoghurt Cake

    This is the easiest cake recipe ever which you can modify readily by changing the yoghurt flavour or adding other goodies like choc chips or nuts. It only has 4 ingredients and is a true 1-2-3-4 cake. You will not stop at one slice!

    Serves: 12 

    • 1 200g tub of yoghurt (any flavour you like)
    • 2 tubs of self-raising flour (use the empty yoghurt tub to measure)
    • 3 tubs of caster sugar (use the empty yoghurt tub to measure)
    • 4 eggs

    1. Pre-heat the oven to 160 C / Gas 3 and grease a 20cm cake tin.
    2. Empty the yoghurt tub into a medium sized mixing bowl and keep the empty tub.
    3. Add 3 almost-full 'tubs' of caster sugar to the yoghurt (use the empty yogurt tub as a measurement), and whisk well.
    4. Add the 4 eggs and whisk the mixture well.
    5. Using the yoghurt tub again measure 2 tubs of self-rasing flour and sift this into the mixture gradually, stirring well after each addition.
    6. Finally whisk the batter for about 30 seconds.
    7. Pour it into the greased tin.
    8. Bake for 1 hour at 160 C / Gas 3.

    Yes, it is very easy to make, but it is weird - very sweet, but texture is neither cake nor bread. Reminded me of the greaseless sponges my mother used to make after the war (yes I am that old), when there was still rationing. Bit like the sponges used for trifles. OK on the day it was made, but lack of fat meant it didn't store well. I used a cherry yoghurt, full fat, and coudn't taste the cherry in the finished cake. Won't bother with any more. I tweaked it by using 2 tubs, not 3, of sugar.  -  07 Dec 2016
