This is a traditional Scots way with heart-friendly herring and oatmeal. Using fresh damp fish and fine oatmeal is healthier than coating the fish in a heavier mixture of flour, egg and breadcrumbs.

Ingredients
Serves: 4
8 tablespoons fine or medium oatmeal
4 pairs of herring fillets, cleaned
Vegetable oil for frying
Black pepper

Spread the oatmeal out on a large dish. Quickly rinse the herring fillets under the cold tap and shake dry. Lay each pair of fillets in the oatmeal, pressing down firmly and turning to coat the fish well.
Heat a very fine film of vegetable oil in a large heavy frying pan and cook the fish for 3-4 minutes on each side. Remove to plates, sprinkle with pepper and serve with lemon wedges and mustard or horseradish sauce.
