Slimming World lemon drizzle cake

    Great cake and only 8 syns. You only need four simple ingredients to make this yummy cake.

    Makes: 1 cake

    • 50g self raising flour
    • 45g caster sugar
    • 2 lemons
    • 5 eggs

    1. Add the flour and 30g of the sugar in a bowl.
    2. Squeeze the juice of 1 lemon into the mix.
    3. Zest both lemons and add the zest to the mix.
    4. Separate the egg yolks from the whites. Keep the whites aside, beat the yolks and add to the mixture.
    5. With a clean whisk, whisk the egg whites until they are fluffy and form stiff peaks. Fold into the mixture.
    6. Tip mixture into a 900g silicone loaf tin.
    7. Bake for 20 to 30 minutes in a preheated 180 C / Gas 4 oven until golden brown. Allow to cool a little.
    8. Mix the juice of the second lemon and remaining 15g of sugar. Pour over the top of the cake and bake for another 10 minutes until the top of the cake is beautifully glazed.
