2 tablespoons any flavouring (vanilla, almond extract, etc.)
1 1/2 tablespoons oil

Add flour and sugar to a normal sized mug and stir.
Add the egg and milk to the mix, stirring well to make sure there are no pockets of dry ingredients at the bottom of the mug. Try to get as much air into the mix as possible. Add any flavourings at this stage too.
Add oil to the top of the finished mix and stir in gently, this is only to prevent the cake from sticking to the mug and keep the cake moist during its quick cooking. Be careful not to knock the air out of the mix or it will be a flat cake!
Put the mix into a microwave and blitz it for 30 seconds at a time. You don't want to overcook the cake and it can burn easily but it needs to be done in the middle. Use a cocktail stick or fork to check that the mix is cooked after each 30 seconds. Take it out when it has stopped rising.
You can either eat the cake from the mug, which will keep it warm for longer (I love to eat the cake whilst it is still warm but be careful as the mug will be hot too) or loosen the cake and tip it out onto a plate to eat. Sometimes a dollop of Nutella or jam on top is the perfect finishing touch!
