Heat a little oil in a frying pan over medium high heat. Add the chicken and cook and stir till browned on all sides.
Meanwhile, throw the onion, carrot and peppers into another pan with some oil and fry until slightly softened.
Whilst the veg is cooking throw the pineapple juice, stock, vinegars, sugar, salt and pepper and sugar into a bowl and whisk until mixed.
Once the veg is soft (but still has bite) add the chicken and pineapple pieces to the pan and throw in the sauce, allow to cook for a few minutes and mix until the sauce covers everything.
Mix the cornflour and cold water and add to the pan little by little until the sauce is thickened. Enjoy!
You can add almost anything to this dish, or can use beef instead. Bamboo or water chestnuts would be nice. Personally I like my sweet and sour a little more on the sour side so I add a little extra vinegar!
