Chocolate dream cupcakes

    I came up with this recipe from a basic "create your own" cupcake guide. It's really moist and creates great cupcakes. When making them, I use all dairy-free alternatives so that's something to keep in mind! Hope you enjoy it!

    Makes: 12 cupcakes

    • 110g (4 oz) margarine or butter
    • 110g (4 oz) caster sugar
    • 2 eggs
    • 85g (3 oz) self-raising flour
    • 30g (1 oz) cocoa powder
    • 1/2 teaspoon vanilla extract
    • 4 tablespoons cream, divided
    • 50g (1 3/4 oz) chocolate

    1. Preheat the oven to 180 C / Gas 4. Line a 12 hole muffin tin with paper cases and put it to the side.
    2. Beat together the margarine together with the sugar in a bowl. Add the eggs and beat until combined.
    3. Add the flour, cocoa, vanilla and 2 tablespoons of the cream; mix together with a spoon. Evenly spoon the mixture into the cases.
    4. Bake for 15 to 20 minutes.
    5. Whilst baking, melt the chocolate with the remaining cream and stir till combined. once cakes are baked and cooled, coat with icing and decorate at will!
