Mackerel with noodles and veg

    Tasty and healthy meal for two. You could use various types of fish here. Choose a marinated fish for more flavour.

    Serves: 2 

    • 100g cabbage, sliced
    • 100g onion, sliced
    • 400ml vegetable stock
    • 200g beansprouts
    • 155g courgette, chopped into matchsticks
    • 80g mushrooms, sliced
    • 150g soft medium noodles ready to wok
    • 20g pesto alla genovese
    • 1/2 teaspoon chilli powder
    • 100g Tesco® chilli, ginger and lime marinated mackerel fillets
    • oil for frying

    1. Simmer stock with cabbage and onion until beginning to soften. Add the rest of the ingredients except the fish and leave barely simmering while you cook the fish.
    2. Heat a frying pan with a little oil over medium high heat. Add fish skin side down and cover with a lid. Cook, checking every 2 minutes; fish is done when it flakes easily with a fork.
    3. Dish up the noodles and veg into bowls with the fish laid on top.
