About this recipe: Delicious fairy cakes that only take a few minutes to make!

Ingredients
Serves: 12 

  • 1 medium egg
  • 50g of self-raising flour
  • 50g of caster sugar
  • 50g of butter
  • 50g icing sugar, or as needed
  • 2 tablespoons of water, or as needed
  • colourful sugar flowers or other edible cake decorations

Method
Prep:20min  ›  Cook:10min  ›  Ready in:30min 

  1. Preheat the oven to 180 degrees C / gas mark 4. Place paper cases into a 12 hole bun tin.
  2. Sieve the flour into a mixing bowl, add sugar and butter, then slowly add 1 beaten egg.
  3. Whisk for approximatly 2 mins until smooth and creamy.
  4. Spoon into cake cases until they are half full.
  5. Cook for 10-15 mins and remove when light, fluffy and golden brown. Leave to cool for about 5 mins.
  6. Mix the icing sugar with water until it is thick and glossy, then divide evenly onto the cakes.
  7. Place decorations onto each cake. Leave to set - then eat and enjoy!

Altered ingredient amounts. Made these yesterday, very tasty but i would recomend at least doubling the Ingredients amount, as even using 12 normal sized cake cups I struggled to fill them all even to 1/2 full which left my cakes a tad on the thin side when done. Still the kids didnt mind :O) - 03 Jan 2011

Not sure what I did wrong but mix only made 7 buns and I was only just able to half fill cases. Maybe recipe for mini cakes?? Also seemed a bit hard and not risen - maybe didn't whisk enough?? Have tried many recipes before from this site and have been fine so not a novice baker!! - 08 Mar 2011
