    About this recipe: Vesuvius fusilli, a traditional Neapolitan pasta dish made with fusilli spirals, simple to make and suitable for a tasty, quick lunch or dinner!

    Serves: 3 

    • olive oil, as needed
    • 400g tin San Marzano tomatoes
    • salt and pepper to taste
    • dried oregano, to taste
    • 400g fusilli
    • 300g mozzarella cheese, cut into cubes
    • 1 handful grated Pecorino or Parmesan cheese
    • 1 handful chopped fresh basil

    1. Put a little oil in a pan, add the tomatoes, salt, pepper and a little oregano and cook for a few minutes over a medium heat.
    2. Meanwhile, boil the fusilli in a large pan of salted water until al dente. Drain well.
    3. Transfer drained pasta to a large bowl. Add the tomato sauce, mozzarella, Pecorino or Parmesan cheese and mix well. Finally add the fresh basil leaves to complete the dish, and serve.
