About this recipe: This semolina porridge is a fabulously different way to start your day. Kids will also love it thanks to its vibrant purple colour.

Serves: 1 

  • 250ml milk
  • 3 tablespoons semolina
  • 1 pinch salt (optional)
  • 75g blueberries
  • 2 tablespoons desiccated coconut
  • sugar, to taste

  1. Heat the milk in a saucepan over medium high heat. When it boils, immediately add the semolina, salt, blueberries and coconut. Bring back to the boil, then lower the heat to a simmer. Stir constantly till thickened, 3 to 5 minutes. Once thickened, remove from heat and stir in sugar to taste. Serve hot.


You can easily double or treble the quantities to serve all the family. I've also made this dairy free by using almond milk with great results.
